Ingredients
  

  • 2 large chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions
 

  • Pat the chicken dry and season with salt, black pepper, and optional red pepper flakes.
  • Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden and cooked through. Remove and keep warm.
  • Add remaining butter to the skillet, sauté garlic until fragrant.
  • Stir in the rice and toast lightly for 1-2 minutes.
  • Pour in the chicken broth and bring to a simmer. Cover and cook for 15-18 minutes until the rice is fluffy.
  • Stir in parmesan cheese and lemon juice. Return chicken to the pan and sprinkle with fresh parsley.
  • Serve hot and enjoy your creamy garlic parmesan rice with tender scampi chicken.

Notes
