Ingredients
  

  • 400 g spaghetti
  • 2 pieces chicken breasts
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 bulbs garlic
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes
  • 1 cup crumbled feta cheese
  • 0.25 cup heavy cream
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Drizzle garlic bulbs and chickpeas with olive oil, sprinkle with salt, and roast for 25-30 minutes until garlic is tender and chickpeas are crispy.
  • Season chicken breasts with Cajun seasoning, salt, and pepper. Sear in a hot skillet with olive oil for 6-7 minutes per side until golden brown and cooked through. Set aside to rest.
  • Cook spaghetti in salted water according to package instructions until al dente. Drain and toss with a drizzle of olive oil to prevent sticking.
  • Squeeze roasted garlic cloves into a blender, add feta and heavy cream, and blend until smooth and fluffy.
  • Place pasta on plates, slice chicken and arrange on top, add crispy chickpeas and cherry tomatoes, and finish with dollops of whipped feta. Garnish with fresh parsley.

Notes

Let the chickpeas cool completely before storing to maintain their crunch.
For a milder version, reduce the Cajun seasoning and add extra cream to the sauce.
