  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 clove garlic, minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup corn kernels
  • 0.25 cup red onion, diced
  • 0.5 cup tomato, diced
  • 1 tbsp lime juice
  • 1 avocado, sliced
  • 0.25 cup Greek yogurt or sour cream
  • 1 clove garlic, minced (for sauce)
  • 1 tbsp lime juice (for sauce)
  • 2 tbsp cilantro, chopped

Instructions
 

  • Combine shrimp with olive oil, smoked paprika, chili powder, garlic, salt, and pepper. Marinate for 15–20 minutes.
  • Mix corn, red onion, tomato, cilantro, and lime juice. Season with salt and pepper.
  • Heat grill or grill pan over medium-high heat. Grill shrimp 2–3 minutes per side until charred and opaque.
  • Combine Greek yogurt, minced garlic, lime juice, and a pinch of salt for the sauce.
  • Layer corn salsa, avocado, and grilled shrimp in a bowl. Drizzle with creamy sauce and garnish with cilantro.

Notes

Pat shrimp dry before marinating for the best grill marks. Serve immediately for the freshest flavor.
