Ingredients
  

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound lean ground beef (85–90% lean)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup chopped red onion
  • 1 avocado, sliced
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/4 cup Greek yogurt or sour cream

Instructions
 

  • Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, and black pepper. Roast for 25–30 minutes until tender and caramelized.
  • In a skillet over medium heat, cook ground beef until browned, breaking it into crumbles. Drain excess grease and season with smoked paprika and a pinch of salt and pepper.
  • Slice avocado, chop red onion, and roughly chop parsley or cilantro.
  • Assemble bowls by dividing sweet potatoes and beef evenly. Top with avocado, onion, herbs, and a dollop of Greek yogurt or sour cream.
