Ingredients
  

  • 1 cup finely chopped corned beef
  • 1/2 cup sauerkraut, drained and squeezed dry
  • 1 cup shredded Swiss cheese
  • 4 oz cream cheese, softened
  • 1 cup bread crumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 cups vegetable oil, for frying
  • 1/2 cup Thousand Island dressing
  • 1 tbsp hot sauce or sriracha

Instructions
 

  • Combine corned beef, sauerkraut, Swiss cheese, and cream cheese in a bowl until fully mixed.
  • Scoop about 1 tablespoon of mixture, roll into firm balls, and refrigerate for 30 minutes.
  • Dredge each ball in flour, dip in egg, then roll in bread crumbs until fully coated.
  • Heat oil to 350°F (175°C) and fry in small batches for 3–4 minutes until golden brown. Drain on paper towels.
  • Mix Thousand Island dressing with hot sauce or sriracha to make the dipping sauce.
  • Serve hot with the spicy dipping sauce.

Notes

Make sure to dry the sauerkraut well to avoid a soggy filling. For a baked version, cook at 400°F (200°C) for 20–25 minutes, turning halfway for even browning.
