  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil or sesame oil
  • 1 cup coconut milk
  • 2 tbsp fresh lime juice
  • 2 cups cooked jasmine rice
  • 1 tbsp fresh cilantro, chopped
  • 1 red chili pepper, sliced (optional garnish)
  • 1 lime, sliced for garnish

Instructions
 

  • Combine sweet chili sauce, soy sauce, garlic, and ginger in a bowl. Toss the chicken to coat evenly and marinate for at least 30 minutes.
  • Heat oil in a skillet or grill pan over medium-high heat. Cook chicken for 6-8 minutes, turning occasionally, until golden and caramelized.
  • In a small saucepan, warm coconut milk with lime juice and a tablespoon of sweet chili sauce. Stir and simmer until slightly thickened.
  • Place warm jasmine rice in serving bowls, top with chicken, drizzle with coconut lime sauce, and garnish with cilantro, sliced chili, and lime wedges.

Notes

1. For extra flavor, marinate the chicken overnight.
