  • 2 large chicken breasts
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 cup cremini mushrooms, sliced
  • 1 lb baby potatoes, halved
  • 2 tbsp honey
  • 1 tsp chili flakes
  • 1 tbsp fresh parsley, chopped
  • salt and black pepper to taste

Instructions
 

  • Preheat oven to 425°F. Toss halved baby potatoes with olive oil, salt, pepper, honey, and chili flakes. Roast for 30-35 minutes until golden and crispy.
  • Cook fettuccine in salted water until al dente. Reserve ½ cup pasta water.
  • Season chicken with salt, pepper, and garlic powder. Sear in a skillet with olive oil until golden and fully cooked. Remove and rest.
  • In the same skillet, sauté mushrooms in butter until tender. Add garlic and cook 1 minute. Stir in heavy cream and Parmesan; simmer until smooth. Thin with pasta water if needed.
  • Toss pasta in Alfredo sauce, slice chicken, and serve with roasted potatoes. Garnish with parsley.

Notes

Reserve some pasta water to adjust the creaminess of the Alfredo sauce. Roast potatoes cut side down for maximum crispiness.
